Birthdays

Birthdays... when you get to my age are precious. So very glad to be here when so many of my friends have left this earth. Through the years, I have remembered going out to dinner, to a bar, my kids making posters, and celebrating on a day everyone thought it was my birthday and it wasn’t. Funny.
Today, I did what I love. Slept late. Went out for breakfast. Watched my granddaughter play basketball. Worked in my studio with art projects. Drank champagne. My husband cooked me homemade pizza from his outdoor pizza oven. Listen to music that has remained my favorite over the years. That is a wonderful day for sure. 
I am thankful for my health, my husband, my children and their children, friendship, a wonderful place to retreat called home. I am so blessed.

Destin

Destin, Florida has sandy beaches like I have never seen in my life. They are the whitest beaches...you would look at them in January and swear it was snow. Totally amazing!
It was cold...unfortunately, be that didn’t stop us from enjoying the beauty of the surroundings. Notice, Dave is holding on to his kite. He would never go to the beach without one of his kites.
 We walked with the birds...
Its was like they didn’t mind us there
 And we left our marks in the sands of Destin, Florida.
And we will go back one day when we have more time and sun!

Pinterest Cooking

I have found that I have become a Pinterest cook....no longer a cookbook collector that I once was. I plan to share some of my cooking recipes that have been huge successes.

Christmas we had a Mexican Dinner theme. One of the dishes I prepared was the Chicken Fajita Dippers. They were yummy! Follow me on Pinterest....

BAKED CHICKEN FAJITA ROLL-UPS
  • INGREDIENTS

  • 1 T. olive oil
  • 1 red or orange bell pepper, seeded and diced
  • 1/2 onion, diced
  • 1 clove garlic, finely minced
  • 1/2 T. taco seasoning
  • 1 T. freshly squeezed lime juice
  • Pinch brown sugar
  • 2 c. shredded cooked chicken
  • 1 c. shredded Mexican cheese blend
  • About 12 small (fajita-sized) flour tortillas
INSTRUCTIONS
  1. Preheat oven to 415 F. Line a baking sheet with foil; lightly coat foil with cooking spray.
  2. In a large skillet over medium low heat, warm olive oil.
  3. Add diced pepper and onion, and cook until veggies are soft.
  4. Stir in garlic, and cook until fragrant, about 30 seconds.
  5. Add taco seasoning, and cook for 30 seconds.
  6. Stir in lime juice and brown sugar.
  7. Add chicken, and stir to combine.
  8. Remove skillet from heat.
  9. Lay tortillas out flat.
  10. Add about 1 ½ - 2 tablespoons of filling to the outer third of each tortilla.
  11. Sprinkle cheese evenly over chicken filling.
  12. Tuck the top and bottom in, and roll tortilla up.
  13. Place seam side down on prepared baking sheet.
  14. Lightly mist tortillas with nonstick cooking spray.
  15. Bake 15-20 minutes, or until crisp.
  16. Serve with sour cream, guacamole, and salsa, or your favorite dipping sauces.
